Pan Fried Crumbed Chicken with Creamed Mushrooms...It is fried...it is creamy...so of course it is one of my favorite meals...for a cheat day or for a day you want comfort food

Pan Fried Crumbed Chicken


Ingredients:

  • For Marinating Chicken Breasts :Garlic Paste, Tobasco, Salt, Pepper 
  • Flour mix :Flour,Salt,Pepper
  • Egg mix : Egg white, Salt, Pepper ,English Mustard, about 1 tbsp Water 
  • Coating Mix : Breadcrumbs ,Salt,Pepper, Garlic powder ,Dried Parsley

Instructions:


Buy boneless chicken breasts and get them filleted by the butcher about 1/4" to 3/8" thickness or do it yourself  with the help of a meat pounder and chicken wrapped up in a cling film.Combine all the ingredients mentioned for marinating in a bowl, rub the chicken breasts with the mix and let it marinate for at least one hour.

Prepare all the mixes:
First plate, flour mix - combine flour, salt, pepper and mix well
Second plate, egg mix - whisk the egg white together with rest of the ingredients.
Third plate, coating mix: combine breadcrumbs ,salt,pepper, garlic powder , dried parsley and mix well.


Dip the chicken first into flour mix ,then into the egg mix and then into the breadcrumb mix – shaking off excess at every stage.
You can double dip in egg and then the breadcrumbs again. 

Leave it to rest for about half an hour in the fridge. 

Shallow fry on medium flame, till golden brown on both sides.




Creamed Mushrooms




Ingredients:


  • Olive oil/Butter
  • Mushrooms, thinly sliced 
  • Garlic, very finely chopped
  • Onions, finely chopped
  • Salt
  • Pepper
  • Fresh parsley, very finely chopped
  • Fresh cream



Instructions:


In a non-stick pan heat some olive oil. Add garlic and onions. 

When onions go soft add sliced mushrooms,salt and pepper. 

Cook on medium heat till most of the water evaporates.

 Lower the heat and add some fresh parsley and cream. 

Stir and let it cook for no more than 5 minutes on low flame.
