Roasted Broccoli Soup…another one of those internet recipes,
which you read and then move on from thinking “nope, this won’t work for us”…and
then suddenly one fine day, when you are in the kitchen doing your thing, you realize
“nope, this is not My thing…this is THAT internet thing”…well, it tastes like
pureed curry but in the name of “healthy” have had it a couple of times now and
it is kind of growing on me...will I give up Number I for this?...nooooo…will I
make this again? Yes, but minus the
tomato
Roasted Broccoli Soup
Ingredients:
- Olive Oil, 1 tbsp
- Broccoli, chopped including stems, 1 medium
- Onion, cut into fours, 1 medium
- Tomato, cut into fours, 1 medium
- Garlic cloves, 5
- Salt to taste
- Vegetable Stock, 2-3 cups
Instructions:
Place broccoli, onion, tomato and garlic on a baking sheet. Sprinkle with oil and salt.
Broil the veggies until the broccoli crisps up.
Remove from oven and add the veggies to boiling
stock. Boil till tender.
Let the mix cool slightly, and then blend to a smooth puree.
Add salt &pepper to taste. Return soup to pot and heat gently until ready to serve.
